In an anaerobic process, the coffee is sealed and allowed to ferment a little bit during processing.
This fermentation allows for a bit of a funk to set in, giving the coffee very wine-like tasting notes.
And on top of that, this coffee is Rainforest Alliance Certified.

Due to reactions in the anaerobic process, this coffee has a large range of density within the beans. This means that you'll see a range of colors, and a slightly different flavor profile between each cup. Enjoy!
